Receta Roomie's Low Fat Vegetarian Chili

Ingredientes
- 1 tsp Extra virgin olive oil
- 2 med onions
- 2 x Cloves of garlic, chopped
- 56 ounce Canned tomatoes or possibly 3lb fresh
- 15Â 1/2 ounce Red kidney beans
- 15 ounce White kidney beans
- 15 ounce Chickpeas
- 1Â 1/2 c. Minced celery
- 1 x Green pepper, minced
- 3 Tbsp. Lime or possibly 2 Tablespoons lemon juice
- 1 Tbsp. Chili pwdr
- 1Â 1/2 tsp Oregano
- 1Â 1/2 tsp Cumin
- 1/4 tsp Cinnamon
- 12 ounce Light beer
- Â Â Dry roasted peanuts
- Â Â Cheddar cheese
Direcciones
- 1. In a large pot, heat oil and saute/fry onions and garlic till soft.
- 2. Add in all ingredients except beer, peanuts and cheddar cheese. Cover and simmer 1 1/2 hrs.
- 3. Add in beer and simmer uncovered for 30 min.
- 4. Add in handful of peanuts and sprinkle cheese on each serving.
