  1. Combine cream, sugar and syrup in heavy medium saucepan. Stir over medium heat till sugar dissolves. Increase heat and bring to boil. Reduce heat to medium-low and simmer sauce till caramel colored and reduced to 1 3/4 c., whisking occasionally, about 35 min.
  2. Fold in maple flavoring. Cold slightly. (Can be made 3 days ahead. Cover and chill. Rewarm over medium heat, stirring; add in 2 Tbsp. warm water if necessary to dissolve any crystallized sugar.)
  3. This recipe yields 1 3/4 c..
  4. Yield: 1 3/4 c.
