Receta Mediterranean Chicken And Vegetable Salad

Ingredientes
- 1 c. Lightly packed fresh basil leaves
- 1/4 c. Extra virgin olive oil
- 2 Tbsp. Fresh lemon juice
- 1 x Garlic clove, chopped
- 1/2 tsp Salt
- 1/4 tsp Freshly grnd pepper
- 5 c. Torn assorted lettuces
- 1 x Red bell pepper, diced
- 1 x Yellow bell pepper, diced
- 2 sm Zucchini (8 ounce.), halved lengthwise and sliced thin
- 1/2 c. Minced onion
- 1 can (16 or possibly 19 ounce.) chickpeas (garbanzo beans), liquid removed and rinsed
- 12 ounce Cooked boneless, skinless chicken breast, sliced crosswise
Direcciones
- 1. Make dressing: Puree all ingredients in food processor or possibly blender till smooth.
- 2. Pour half the dressing over lettuces in bowl and toss; arrange on serving platter.
- 3. Add in remaining ingredients and dressing to bowl; toss. Spoon onto greens.
