Receta Mediterranean Lemon Chicken

Ingredientes
- 1 lrg lemon
- 2 tsp oregano
- 2 lrg garlic clove chopped
- 1 Tbsp. extra virgin olive oil
- 1/4 tsp salt and pepper
- 4 x skinless boneless chicken breast (to - 6) or possibly legs
Direcciones
- 1. Preheat oven to 425F. Grate peel from half the lemon into 9"x13" baking dish. Squeeze out juice and add in 1/4cup to peel with oregano, garlic, oil and seasonings. Stir till mixed.
- 2. Coat chicken with lemon mix. Arrange bone-side up in dish. Lay a piece of foil loosely over top. Bake in centre of oven for 20 mins. Turn chicken and baste. Reduce heat to 400F and continue baking, uncovered, basting every 10 mins, for about another 30 mins. Serve with pan juices.
