Receta Mexican Cabbage

Ingredientes
- 4 lrg potatoes
- 1 lrg onion
- 1 x jalapeno, seeded and minced
- 1 Tbsp. oil
- 1/4 tsp garlic
- 1 x (14 ounce.) can chicken stock and 1 can water
- 1 can diced tomatoes">tomatoes or possibly Rotel tomatoes">tomatoes and omit jalapeno
- 1 head of cabbage Salt and pepper to taste
Direcciones
- Wash and cut up potatoes into large bite size cubes ..Coarsely chop onion.
- Saute/fry onion, potatoes and jalapeno in small amount of oil with garlic till potatoes begin to soften. Transfer to a large pot or possibly Dutch oven. Add in chicken stock, water, tomatoes and coarsely minced cabbage. Cook till cabbage is tender. Add in salt and black pepper to taste.
