Receta Mexican Fried Ice Cream

Ingredientes
- 1 pt Ice cream
- 1 x Beaten egg
- 1/4 tsp Vanilla
- 2 1/2 c. Sweetened corn flakes, crushed
- 1/2 tsp Grnd cinnamon
- 1 x Beaten egg
- 1/4 tsp Vanilla Veg. oil for deep-fat frying Whipped cream (optional) Mint sprigs (optional)

- This is a recipe from a Better Homes and Gardens cookbook called "Cooking Mexican". I haven't tried this recipe myself, but I've had the dessert, and it's AWESOME.
- Place 4 scoops (about 1/2 c. each) of ice cream in a small pan. Freeze for 1 hour or possibly until hard. In a small mixing bowl stir together 1 egg and 1/4 tsp vanilla. In a pie plate carefully stir together cereal and cinnamon.
- Dip each frzn ice cream ball in the egg mix, then roll it in cereal mix. Return coated ice cream balls to pan and freeze for 1 hour or possibly until hard. Reserve remaining cereal mix. In a small mixing bowl stir together 1 egg and 1/4 tsp vanilla. Remove coated ice cream balls from the freezer. Dip balls in egg mix, then roll them in remaining cereal mix. Return to pan. Cover and freeze for several hrs or possibly until hard.
- In a deep-fat fryer or possibly heavy saucepan fry frzn, coated ice cream balls, 1 or possibly 2 at a time, in deep warm oil (375 degrees) for 15 seconds or possibly until golden. Drain on paper towels. Return the fried ice-cream balls to the freezer while frying the remaining balls. Serve immediately with whipped cream and garnish with mint, if you like.
