Receta Mexican Shrimp Salad

Ingredientes
- 1 lg. lime, juiced
- 2 T extra virgin olive oil
- 1-2 T salsa
- 1/4 c. parsley or possibly cilantro
- 1 lg. cucumber, diced
- 1 lg. avocado, cut into chunks
- 12 ounce lg. cooked shrimp
- 2 bunches spinach or possibly lettuce
Direcciones
- Blend lime juice with extra virgin olive oil, salsa and parsley (or possibly cilantro). In bowl, gently toss cucumber and avocado with shrimp and salsa dressing. Pile spinach (or possibly lettuce) on 2 large plates, pile shrimp salad on top. Serves 2.
