  1. 1. In a large stockpot heat 2 Tbsp. extra virgin olive oil and stir-fry onion and garlic 3 min, adding remaining oil with following vegetables as needed. Add in carrot and potato and stir-fry 1 minute. Add in green beans and celery; cook 1 minute. Add in green pepper and zucchini and stir-fry 1 minute. Add in cabbage and stir-fry 1 minute. Add in tomatoes, chicken stock, water, basil, parsley and cheese rind and cook till vegetables are tender, a about 45 min. Remove cheese rind.
  2. 2. Stir in cannellini beans and tortellini and season with salt and pepper. Ladle soup into dish and sprinkle with grated Parmesan cheese. Makes 8 servings.
