- 3 c. Couscous
- 2 c. Cooked Pork Tenderloin, Cut Up, About 1/4 Lb.
- 1Â 1/2 med Green Bell Peppers, Finely Minced, About 1 1/2 C.
- 2 med Carrots, Finely Minced, About 1 C.
- 1/2 sm Red Onion, Sliced
- 1/2 c. Golden brown Raisins
- 1/4 c. Fresh Mint Leaves, Or possibly
- 1 Tbsp. Dry Mint Leaves
- 1/4 c. Fresh Parsley, Minced
- 1/4 c. Lemon Juice
- 1/4 c. Orange Juice
- 2 Tbsp. Olive Or possibly Vegetable Oil
- 1/2 tsp Salt
- 1/2 tsp Grnd Cinnamon
- 1/2 tsp Grnd Black Pepper
Direcciones
- Mix all of the ingredients in a large glass or possibly plastic bowl, blending well.
- Cover and chill about 2 hrs or possibly till well chilled.
- MINTY DRESSING:Mix all of the ingredients together, blending well.
