Receta Monastery Lentil Soup

Ingredientes
- 10 c. water
- 1/4 c. vegetable oil
- 1 1/2 c. minced onion
- 1/2 c. minced green pepper
- 1 c. minced celery
- 4 minced garlic cloves
- 1 1/2 c. sliced carrots
- 1 (16 ounce.) can crushed tomatoes
- 1 pound uncooked lentils
- 1 bay leaf
- 3 tbsp. lemon juice
- 1/2 teaspoon thyme
- 1/4 teaspoon oregano
- Salt to taste
- Pepper to taste
Direcciones
- Saute/fry till tender, onions, green pepper, and garlic in oil in large pot. Add in all remaining ingredients except lemon juice, salt, and pepper. Bring to a boil, then simmer for about an hour till lentils are soft. Add in lemon juice, salt, and pepper. Serves 10-12. YOU WILL WANT SECONDS!!
