Receta Morning Magic Muffins
Delicious breakfast muffins. Get a fruit and veggie serving in cake! And I made some alterations to cut down on fat and sugar which worked very well.
Ingredientes
- 2 C. flour
- 1 1/4 C. brown sugar (or 1/4 C. brown sugar and 1t. stivea, a natural sugar substitute from the health food store)
- 2 t. baking soda
- 2 T. baking powder
- 2 t. cinnamon
- 1/2 t. or less salt
- 1/2 C. raisans
- 1/2 C. nuts
- 1/2 C. flaked coconut
- 3 eggs
- 3/4 C. oil (or 1/4 C. oil and 1/2 C. unsweetened applesauce)
- 1 t. vanilla
- 2 C. grated peeled carrots
- 1 C. grated apple
Direcciones
- Combine first 8 ingredients in large bowl. Stir well.
- Beat eggs, oil, vanilla, carrots, apple in medium bowl.
- Add dry ingredients and stir until moistened.
- Spoon into greased muffin pan.
- Bake at 350 F. for 20 minutes or so.
