One of the great unsolved mysteries is whether BC's famous Nanaimo bars were actually invented in, or by someone from, the eastern Vancouver Island community of the same name. Nobody knows for sure the source of the recipe or its name, or even where the first Nanaimo bar appeared.

  • BOTTOM LAYER
  • 1/2 cup unsalted butter, 1/4 cup sugar, 5 Tbsp cocoa, 1 beaten egg, 1 3/4 cup graham crumbs, 1/2 cup finely chopped almonds, 1 cup coconut.
  • MIDDLE LAYER
  • 1/2 cup unsalted butter, 2 Tb cream, 2 Tbsp vanilla custard powder, 2 cups icing sugar.
  • TOP LAYER
  • 4 squares semi-sweet chocolate, 2 Tbsp unsalted butter.

  1. BOTTOM LAYER
  2. Melt the first three ingredients in a pot. Add the egg and stir to thicken. Remove from heat. Stir in remaining ingredients and press firmly into an ungreased "8 x "8 pan.
  3. MIDDLE LAYER
  4. Cream ingredients together and beat until light. Spread over bottom layer.
  5. TOP LAYER
  6. Melt ingredients over low heat. Cool. When cool, pour over middle layer and chill in refrigerator. ENJOY!!
