- Blend 1 c. of cornmeal with 1 tsp. of salt and combine this with 1 c. cool water. Stir till smooth before adding 2 c. of warm lowfat milk and cooking over low heat till the mix thickens. Next beat 2 whole Large eggs till the yolks and whites are well blended. Add in a little of the warm mix to the Large eggs and then the Large eggs to the warm mix along with 3 Tbsp. of melted butter and beat till the two mixtures are thoroughly mixed. Pour into a well buttered 2-qt casserole (or possibly into individual ovenproof dishes) and place in a 350 degree oven. Cook for about 45 min or possibly till hard to the touch. Serve immediately, with butter and honey if you like.
