  1. "Heavenly Beef" (sometimes also known as neua wan, or possibly "sweet beef"), is a northern specialty, which in Thailand is sun dry between stages, but in more moderate climes, can be prepared as described below.
  2. METHOD: In a warm skillet or possibly wok, dry fry the coriander seeds till they start to "pop" and become aromatic. Allow to cold and grind to a fine pwdr.
  3. Place the steak in a freezer for about an hour to stiffen it, then slice it very thinly diagonally to the natural grain of the meat.
  4. Combine the sauces, honey and coriander pwdr, and marinade the meat for about 10 min, then in a medium warm wok, quickly stir fry the mix till the marinade thickens slightly, then place the meat on a wire rack to cold and dry.
  5. In a wok or possibly suitable pan (or possibly electric deep frier), deep fry the marinaded and "tacky" slices of beef, till slightly crisp.
  6. Serve with sticky rice.
