  • 1 1/3 c. Canned or possibly bottled nopalitos, rinsed, liquid removed, diced (about one 11-oz jar) or possibly 1 1/3 c. diced cooked green beans
  • 3/4 c. Diced peeled jicama
  • 2 sm Tomatoes, diced
  • 1/3 c. Diced onion
  • 1/4 c. Minced fresh cilantro
  • 3 Tbsp. Red wine vinegar
  • 1 Tbsp. Extra virgin olive oil
  • 1 x Serrano chili or possibly small jalapeno chili, chopped
  • 1 x Garlic clove, chopped

Direcciones

  1. Combine all ingredients in medium bowl. Season to taste with salt and pepper. Cover and chill till well chilled, about 2 hrs. (Can be prepared 6 hrs ahead. Keep refrigerated.)
  2. Makes about 2 1/2 c..
