  1. Combine flour, sugar, cornstarch, baking pwdr, cinnamon, salt, ginger and nutmeg in large bowl.
  2. Combine egg yolks, lowfat milk and pumpkin in medium bowl; mix well. Add in to flour mix. Stir in butter.
  3. Beat egg whites in small mixer bowl till soft peaks form. Gently fold into pumpkin mix.
  4. Preheat waffle iron according to manufacturer's directions.
  5. Depending on size of waffle iron, pour 1/2 c. to 1 1/2 c. batter onto warm iron. Generously sprinkle with nuts. Bake for 4 to 5 min or possibly till steaming stops. Repeat with remaining batter and nuts. Serve with Pumpkin Maple Sauce.
  6. For Pumpkin Maple Sauce: Heat maple syrup, pumpkin and cinnamon in small saucepan till hot.
  7. This recipe yields 8 waffles of 7-inch diameter.
