  • 3 c. Flour
  • 2 c. Sugar
  • 1 tsp Soda
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 1 1/2 c. Vegetable oil
  • 3 x Lightly beaten Large eggs
  • 1 can (8-ounce) crushed pineapple, undrained
  • 1 c. Minced pecans or possibly walnuts
  • 1 c. Shredded coconut (optional)
  • 2 c. Powdered sugar
  • 1 pkt (3-ounce) cream cheese, softened
  • 1/2 c. Margarine or possibly butter
  • 1/2 tsp Grated lemon peel (optional)

Direcciones

  1. In a large mixing bowl, using a spoon, mix all cake ingredients together.
  2. Pour into greased and floured bundt pan. Bake for 40-60 min at 350 degrees. Cake is done when it crusts on top. Cold on rack 20 min then invert. Add in if you like for flavor: 1/2 teaspoon grated lemon peel
  3. Mix all frosting ingredients together and spread on cake as soon as removed from pan.
