  • 1 x Onion grated
  • 2 whl dry red chillies
  • 2 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Vinegar
  • 1 tsp Grnd sugar
  • 8 x Mint leave finely minced, (8 to 10)
  •     Salt to taste
  •     Pepper to taste

Direcciones

  1. Hot oil, add in chillies.
  2. Cover, keep aside 20 min or possibly until required.
  3. Remove chillies, reheat the chilli oil.
  4. Add in onion, saute/fry until pink and tender.
  5. Add in all remaining ingredients, mix well, stirfry for 2 min.
  6. Cold a bit, pour over chilled salad, toss with chopsticks or possibly fork.
  7. Serve immediately.
  8. Making time: 10 min (excluding chilli oil making time)
  9. Makes: sufficient dressing for 4 c. salad
