Receta Orange Glazed Caribou Roast

Ingredientes
- 4 lb Caribou roast
- 1 Tbsp. Oil
- Â Â Salt
- Â Â Pepper
- 1 c. Orange juice
- 1 Tbsp. Lemon juice
- 1/2 tsp Allspice
- 1/2 tsp Crushed Juniper berries
- 2 Tbsp. Butter
- 2 Tbsp. Orange juice
- 1 Tbsp. Brown sugar
- 1/2 c. Wild currant jelly
- 1 dsh Angostura Bitters
Direcciones
- Smear roast with oil and season with salt and pepper. Sear in the oven at 450degrees for 15 min. Reduce to 325 and cook covered for 60 min.
- Mix the orange juice, lemon juice and allspice and baste every 15 minutes.
- Mix the butter,sugar, orange juice, jelly and bitters. Brush on the roast and cook uncovered another 15-20 minutes.
