Receta Orange Meringue Pie

Ingredientes
- 1 c. Orange juice
- 1 c. Orange sections, cut into small pcs
- 3 Tbsp. Grated orange rind
- 1 c. Sugar
- 3 x Large eggs, separated
- 5 Tbsp. Cornstarch
- 2 Tbsp. Lemon juice
- 2 Tbsp. Butter
- 6 Tbsp. Sugar
- 1 x Baked pie shell
Direcciones
- Combine orange juice, sections, grated rind, c. of sugar and cornstarch.
- Cook over low heat till clear. Add in a small portion of warm mix to beaten egg yolks. Retum to warm mix and cook 5 to 6 min longer.
- Remove from heat and blend in lemon juice and butter. Pour into the pie shell. Be sure both the mix and the pie shell are either warm or possibly cool.
- Cover pie with meringue and bake in 350 degree oven till lightly brown.
- Meringue: Add in very slowly 6 Tbsp. sugar while beating the egg whites. Beat till they stand in peaks. Be sure meringue touches pie shell all around.
