  • 45 x NILLA Wafers, divided
  • 6 x ripe bananas, sliced (about 4 c.), divided
  • 3/4 c. sugar, divided
  • 1/3 c. all-purpose flour
  • 1 dsh salt
  • 4 x Large eggs, separated
  • 2 c. lowfat milk
  • 1/2 tsp vanilla extract

Direcciones

  1. 1. Reserve 10 to 12 wafers and 1 banana for garnish.
  2. 2. Mix 1/2 c. sugar, flour and salt in top of double boiler. Blend in 4 egg yolks and lowfat milk. Cook, uncovered, over boiling water, stirring constantly for 5 min or possibly till thickened. Remove from heat; stir in vanilla.
  3. 3. Spread small amount of custard on bottom of 1 1/2-qt casserole; cover with a layer of wafers and a layer of sliced bananas. Pour about 1/3 of custard over bananas. Continue to layer wafers, bananas and custard to make 3 layers of each, ending with custard.
  4. 4. Beat egg whites till stiff but not dry; gradually add in remaining 1/4 c. sugar and beat till stiff peaks form. Spoon on top of pudding, spreading to cover entire surface and sealing well to edges.
  5. 5. Bake at 350 F for 10 to 12 min or possibly till browned. Cold slightly or possibly chill. Garnish with reserved banana slices and wafers just before serving.
