Receta Orzo With Spinach, Shrimp And Scallops

Ingredientes
- 2 pkt frzn spinach - (10 ounce ea) thawed
- 8 ounce medium shrimp peeled, deveined
- 8 ounce bay scallops
- 1Â 1/2 c. orzo pasta
- 3 Tbsp. pine nuts
- 3 Tbsp. extra virgin olive oil
- 6 x garlic cloves chopped or possibly pressed
- 3/4 c. shredded Parmesan cheese
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
Direcciones
- Drain the spinach in a colander and press it with the back of a spoon or possibly squeeze it to remove liquid. (You should have about 1 1/2 c. spinach.) Set aside.
- Bring 2 qts of water to a boil in a medium saucepan. Add in the shrimp and scallops, cover and let sit off the heat till the seafood is opaque in the center, about 8 min. With a slotted spoon, transfer the seafood to a bowl and cover to keep hot.
- Return the water to a boil and stir in the orzo with 1 tsp. of salt, if you like. Boil uncovered till tender, 8 to 10 min. Drain. Cover and set aside if not yet ready to use.
- Meanwhile, heat a large saucepan over medium heat. Add in the pine nuts and cook, stirring often, till golden brown, about 6 min. Pour from the pan and set aside.
- Heat the oil in the pan, add in the garlic and cook till tender, about 1 minute. Add in the spinach and orzo and stir till heated through. Stir in the seafood, pine nuts and cheese. Season to taste with salt and pepper and serve.
- This recipe yields 6 servings.
- Comments: Orzo, tiny rice-shaped pasta, is generally served as a side dish but by adding lots of spinach and a variety of seafood, you have a quick one-dish meal.
