Receta Pan Fried Fillet Of Pork With Spicy Couscous And Plum Sauce

Ingredientes
- 400 gm Pork fillet, trimmed
- 2 x Garlic cloves, crushed
- 2 x Rosemary sprigs
- 60 ml Extra virgin olive oil
- Â Â Salt and pepper
- 1 Tbsp. Caster sugar
- 1 Tbsp. Honey
- 15 gm Unsalted butter
- 55 gm Bacon, diced
- Â Â Onion, finely diced
- 450 gm Plums, ripe and stones removed
- 1 x Cinnamon stick
- 250 ml Chicken stock
- 2 Tbsp. Brown sugar
- 1 tsp Fresh mint, minced
- 175 gm Couscous
- 20 gm Butter
- 1 tsp Grnd cinnamon
- 1 tsp Grnd cumin
- 2 tsp Grnd coriander
- 1/2 tsp Salt
- 15 gm Sultanas
- 175 ml Chicken stock
- 1 tsp Coriander, freshly minced
- 1 x Shallot, minced
Direcciones
- Marinate the pork with the garlic, Rosemary and cloves for 2-4 hrs.
- Remove the pork from the marinade and season with salt and pepper. Heat a heavy base pan with 11/2tsp of oil and seal on all sides till golden.
- Add in 1tbsp of sugar and 1tbsp honey and roll the pork around. Place into a preheated oven to finish cooking or possibly continue to fry on the stove for 4-5 min.
- Leave to rest for 8 min before carving. Serve with creme fraiche and mixed herbs.
- Plum sauce: Heat the butter in the pan and gently fry off the onions with the sugar and spices till soft.
- Add in the minced plums and cook for 6-8 min.
- Add in the stock and simmer for 15-20 min.
- Add in the mint. Pass through a food processor or possibly serve rustic.
- Couscous: Heat the butter and add in the minced shallot.
- Add in the spices and sugar and stir well. Add in the couscous and sultanas, stir well.
- Add in the chicken stock and bring to the boil stirring continuously.
- Add in the fresh coriander and cook for 2-3 min and remove from the heat.
- Cover and keep hot.
