This is a soup my Italian Papa (Grandpa) made up when they did not have a in their home. It has become a family favorite! When we serve it, people cannot get enough of it!!

  1. Cut Little Smokies into thirds.
  2. Add Smokies, chopped onion,minced garlic and 1/2 stick butter into a large stick free soup pot. Heat and simmer until onion smokies and onion are slightly brown.
  3. Begin boiling water in a separate pot for noodles, cook noodles as directed on box. Set aside and rinse in colandar just before serving.
  4. Add tomatoes.
  5. Thoroughly wash and cut spinach; add to soup.
  6. Add Bean with Bacon soup cans and water.
  7. Heat and simmer until bubbly.
  8. Add cheese right before serving.
  9. Serve soup in bowls over noodles. Do not add noodles directly into pot, as noodles tend to get mushy after time.
  10. Add additional parmesan cheese if desired.

    I didn't mean to rate my own soup, haha, so my rating doesn't count, although...really it is not my soup, it is my Papa's :) So I won't take the credit, I will give it to him ;)
