  • 1/4 lb dry red beans
  • 1 x bay leaf
  • 1 x onion cut 1/4" dice
  • 4 x garlic cloves chopped
  • 1/4 c. extra virgin olive oil
  • 2 Tbsp. grnd cumin
  • 4 Tbsp. dry oregano
  • 1/4 c. tomato paste
  • 4 x green plantains blanched till
  •     they turn black and then cooled and peeled
  • 1/4 c. corn oil
  •     (or possibly about 1" deep in frying pan)
  • 8 x Large eggs
  • 1 c. grated cotija cheese

Direcciones

  1. Boil beans in water to cover with bay leaf till tender; drain. Saute/fry onions and garlic in extra virgin olive oil till tender. Add in cumin and oregano; cook for 2 min. Add in tomato paste and cooked beans. Puree in a food processor.
  2. Fry cooked plantains in a skillet at 300 degrees till tender. Place between 2 wet towels and roll to 1/4-inch thickness with a rolling pin to create a round "dough" of plantain. Return to pan and cook for 3 min on each side or possibly till edges are crisp.
  3. To serve, spread puree over plantains. Scramble Large eggs in a non-stick pan, and place on top of plantains. Sprinkle with cheese.
  4. This recipe yields 4 servings.
