Receta Pecan Crusted Halibut

Ingredientes
- 1/2 c. flour
- 1/2 c. cornmeal
- 1/2 c. finely minced pecans
- 1 c. lowfat milk
- 1 x salt and freshly grnd pepper
- 4 x halibut fillets
- vegetable oil
- 3 Tbsp. butter
- 2 Tbsp. dry white wine
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. fresh lime juice
Direcciones
- 1. Combine flour, cornmeal, and pecans. Season with salt and pepper.
- 2. Pour lowfat milk into a large saucepan, add in the halibut in a single layer, cover and simmer over medium-low heat till fish is almost cooked through (about 5 min).
- 3. Remove fish to pecan mix, coat on both sides.
- 4. Heat vegetable oil in large skillet (1/2-inch depth of oil). When oil is very warm add in the fish and fry till golden, about 30 seconds on each side. Remove fish to paper towels, drain, and keep hot.
- 5. In sauce pan heat butter, stir in wine, lemon juice, and lime juice.
- Simmer for 2 min. Remove from heat and season with salt and pepper.
- 6. Place fish on plates and spoon sauce over fish, or possibly serve the sauce on the side.
