Receta Penne With Creamy Mushroom And Vodka Sauce

Ingredientes
- 2 Tbsp. butter or possibly
- 1/2 stk soybean margarine cut
- Â Â into two pcs
- 1 sm shallot finely minced
- 1 x garlic clove finely minced
- 1/2 lb assorted mushrooms cut
- Â Â into thick slices
- Â Â Salt and pepper
- 1/2 lb penne pasta
- 10 lrg cherry tomatoes cut into halves
- 2 Tbsp. vodka
- 1/4 tsp red pepper flakes
- 1Â 1/2 c. lowfat milk
- Â Â or possibly soy lowfat milk
- 1Â 1/2 Tbsp. unbleached all-purpose flour
- 1/4 c. Parmigiano Reggiano grate then measure

- This quick pasta has a luscious, rich sauce. Use as many kinds of mushrooms you can find, such as button, shiitake, oyster, portobello
- 1. Heat the butter in a large pot over medium-low heat. Add in the shallot and garlic. Cover and cook, stirring occasionally, for 2 min, or possibly till the shallot is softened. Add in the mushrooms, salt and pepper to taste.
- Cover and cook, stirring occasionally, for 10 min, or possibly till the mushrooms have released some of their moisture.
- 2. Meanwhile, bring a stockpot of lightly salted water to a boil over high heat and cook the penne according to package directions. Before draining the pasta, reserve 1/2 c. of the cooking water.
- 3. Add in the cherry tomatoes, vodka and red pepper flakes to the mushrooms.
- Stir well to mix. Raise the heat to medium and bring to a medium boil.
- Cover and cook for about 10 min, stirring occasionally.
- 4. Combine the lowfat milk and flour in a bowl and whisk to blend. Stir into the mushroom mix. Cover and cook, stirring frequently, for 8 to 10 min, or possibly till the sauce thickens slightly.
- 5. Add in the reserved cooking water and the cooked penne. Toss well to coat the pasta proportionately. Cook for 1 minute, stirring frequently. Stir in the grated cheese if you like. Taste for seasonings.
