Receta Phebe's Manhattan Clam Chowder

Ingredientes
- 6 x smoked bacon strips - (to 8) diced
- 1 x garlic clove chopped
- 1/2 x Spanish onion diced
- 1/2 x red bell pepper diced
- 1/2 x yellow bell pepper diced
- 1 x celery stalk minced
- 1 can diced peeled tomatoes - (8 ounce)
- 1/2 tsp minced fresh thyme
- 1 med leek diced
- Â Â Red pepper flakes to taste
- 2 c. clam juice
- 2 c. vegetable stock
- 1 lrg Idaho potato peeled, diced,
- Â Â and cooked
- 1 can chopped or possibly minced clams
- Â Â Salt to taste
- Â Â Freshly-grnd balck pepper to taste
- 1 dsh lemon juice
- Â Â Minced fresh parsley for garnish
Direcciones
- Cook bacon with garlic in a 10-inch skillet over low heat till bacon is golden. Add in onion, peppers and celery and cook for 5 min over medium heat till all vegetables are slightly softened.
- Add in tomatoes, thyme, leek, pepper flakes, clam juice and vegetable stock. Simmer for 15 min.
- Add in potato, clams, salt and pepper. Simmer till heated through, about 5 min. Add in lemon juice and additional salt and pepper, if needed.
- Serve warm, garnished with minced parsley.
- This recipe yields 4 to 6 servings.
