- 2 c. Flour
- 3 tsp Baking Pwdr
- 1/2 c. Sugar
- 1/2 tsp Salt
- 1 x Egg
- 3/4 c. Lowfat milk
- 1Â 1/4 c. Crushed Pineapple, drain/reserve juice
- 1 Tbsp. Cornstarch
- 1/2 c. Sugar
- 1/4 tsp Salt
- 1/2 c. Water
- 3 tsp Lemon Juice
- 2 tsp Butter
- Â Â Juice From Crushed Pineapple

- FOR THE FRITTERS:Sift flour, baking pwdr, sugar, and salt. Beat egg, add in lowfat milk, and add in mix to dry ingredients. Add in pineapple, beating rapidly. Drop small amounts into warm fat but cook slowly, turning frequently. Serve at once with sauce.
- FOR THE SAUCE:Mix cornstarc, sugar and salt. Blend with water. Cook, stirring constantly, till it boils. Add in remaining ingredients and remove from fire. Serve over warm fritters.
