  • 2 lbs. plums or possibly 1 1/2 lbs. tart apples
  • 1 1/4 c. all-purpose flour, sifted
  • 1/4 c. sugar
  • 1/4 c. regular butter
  • 1 egg
  • 1/4 c. lowfat milk
  • 1 1/2 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

  1. Grease 13 x 9 x 2 inch baking dish. Wash fruit and drain. Slice fruit thinly (if using apples, pare quarter, core, and slice thinly - measure 3 c.). Preheat oven to 400 degrees. Into medium bowl, sift flour with 1/4 c. sugar, baking pwdr, and salt. With fork or possibly pastry blender; cut in 1/4 c. butter. Beat egg with fork, then add in lowfat milk and vanilla; blend. Add in to flour mix and beat vigorously with fork till smooth. Using spatula or possibly rubber scraper, spread batter proportionately over bottom of prepared pan. Arrange fruit slices over batter to cover completely.
  2. Topping: Mix 1/4 c. sugar, 1 tsp. cinnamon, and the melted butter. Spoon over fruit. Bake 35 min or possibly till fruit is tender and pastry golden brown. Remove to wire rack and cold slightly. In small skillet, over medium heat, mix preserves with 1 Tbsp. water, stirring till melted. Brush over fruit. Slice and serve. Can top with whipped cream.
