Receta Poached Salmon With Yogurt Dill Sauce

Ingredientes
- 2 c. Water
- 1 c. Dry white wine or possibly bottled clam juice
- 1 x Lemon sliced
- 1 sm Onion sliced, (optional)
- 2 x Bay leaves
- 8 x Black peppercorns
- 4 x Dill sprigs
- 1 tsp Tabasco pepper sauce
- 1/4 tsp Salt
- 4 x Salmon or possibly halibut steaks - (8 ounce ea)
- 1 c. Plain yogurt
- 1 Tbsp. Minced fresh dill
- 1 Tbsp. Dijon mustard
- 1 tsp Lemon juice
- 1/2 tsp Tabasco pepper sauce
Direcciones
- In large skillet, combine water, wine, lemon, onion, bay leaves, peppercorns, dill, Tabasco sauce and salt. Bring to a boil. Reduce heat to low; simmer, covered, 15 min.
- Add in salmon to skillet. Simmer, covered, 12 to 15 min or possibly till fish flakes easily when tested with fork. Serve hot or possibly chilled with Yogurt Dill Sauce.
- For the Yogurt Dill Sauce: In small bowl, stir together ingredients till well blended.
- Makes about 1 c..
