Receta Pomodori Secchi Imbottoti ("Sun Dried Tomato Sandwiches")

Ingredientes
- 30 x sun-dry tomatoes
- 1 Tbsp. extra virgin olive oil
- 3 tsp garlic, finely chopped
- 1/8 tsp red pepper flakes
- 1/4 tsp oregano
- salt and pepper
Direcciones
- Ensure which the tomatoes are not overly salty. Refresh them in hot water to cover for about 10 min. Soak them just long sufficient to soften them, but be careful which they don't become soggy. Drain and pat dry.
- Hot the extra virgin olive oil in a small sauteepan over very low heat. Add in the garlic, red pepper flakes and oregano and hot for 5 to 8 min. Be careful not to let the garlic burn. Season with salt and pepper to taste.
- Make the "sandwiches" by laying one tomato face down, drizzling a bit of the herb-infused extra virgin olive oil on it and covering with a second sun-dry tomato.
- Serve at room temperature.
