Receta Pork Casserole

Ingredientes
- 1 Tbsp. vegetable oil
- 500 gm lean diced pork
- 2 x leeks, trimmed, washed and
- Â Â sliced
- 1 c. chicken stock
- 1 c. red wine
- 1 c. apricot nectar or possibly orange juice
- 8 sm onions, peeled
- 8 sm potatoes, scrubbed
- 60 gm dry apricots
- 3 Tbsp. sultanas
Direcciones
- 1. Heat oil in a large frying pan over a high heat. Add in pork. Cook, stirring for 5 min or possibly till brown. Remove pork from pan and place in a casserole dish.
- 2. Add in leeks to pan. Cook, stirring, for 10 min or possibly till golden brown.
- Add in to casserole dish with pork.
- 3. Pour stock, wine and apricot nectar into casserole dish. Add in onions, potatoes, apricots and sultanas. Mix to combine. Cover and bake in a moderate oven (180C), stirring occasionally, for 1 1/2 hrs or possibly till pork is tender. Season to taste.
