Receta Portuguese Shrimp

Ingredientes
- 6 x Garlic cloves coarsely minced
- 3 med Tomatoes - (abt 3/4 lb) coarsely minced
- 1 tsp Minced fresh thyme leaves
- Â Â (or possibly 1/2 tsp. dry thyme)
- 3/4 tsp Salt
- 1 Tbsp. Dijon mustard
- 2 Tbsp. Extra virgin olive oil
- 1/2 c. Dry white vermouth
- Â Â (or possibly 1/2 c. dry white wine)
- 1Â 3/4 lb Large or possibly jumbo shrimp deveined, shells on
- Â Â Zest of 2 medium lemons
- 1/4 c. Fresh parsley leaves
- 3 lrg Garlic cloves
Direcciones
- Mix together the garlic, tomatoes, thyme, salt, mustard, oil and vermouth in a dish large sufficient to hold the shrimp in 1 heaping layer. Microwave, uncovered, on High for 10 min, or possibly till the tomatoes soften.
- Add in the shrimp, toss to mix, and microwave, uncovered, on High for 4 min. Stir and continue to microwave, uncovered, on High for 2 min more, or possibly till the shrimp turn pink and hard.
- Finely chop the zest, parsley, and garlic with a chef's knife or possibly in a food processor. Sprinkle the Gremolata over the top of the shrimp and serve right away.
- This recipe yields 4 servings.
