  • 6 x Garlic cloves coarsely minced
  • 3 med Tomatoes - (abt 3/4 lb) coarsely minced
  • 1 tsp Minced fresh thyme leaves
  •     (or possibly 1/2 tsp. dry thyme)
  • 3/4 tsp Salt
  • 1 Tbsp. Dijon mustard
  • 2 Tbsp. Extra virgin olive oil
  • 1/2 c. Dry white vermouth
  •     (or possibly 1/2 c. dry white wine)
  • 1 3/4 lb Large or possibly jumbo shrimp deveined, shells on
  •     Zest of 2 medium lemons
  • 1/4 c. Fresh parsley leaves
  • 3 lrg Garlic cloves

Direcciones

  1. Mix together the garlic, tomatoes, thyme, salt, mustard, oil and vermouth in a dish large sufficient to hold the shrimp in 1 heaping layer. Microwave, uncovered, on High for 10 min, or possibly till the tomatoes soften.
  2. Add in the shrimp, toss to mix, and microwave, uncovered, on High for 4 min. Stir and continue to microwave, uncovered, on High for 2 min more, or possibly till the shrimp turn pink and hard.
  3. Finely chop the zest, parsley, and garlic with a chef's knife or possibly in a food processor. Sprinkle the Gremolata over the top of the shrimp and serve right away.
  4. This recipe yields 4 servings.
