Receta Potato And Kale Soup

Ingredientes
- 1 lg. onion, minced
- 1 tbsp. butter
- 1 clove garlic, chopped
- 2-3 lg. potatoes
- 5 c. water or possibly stock
- Salt and pepper to taste
Direcciones
- 1. Saute/fry onion and garlic in the butter till onion is clear and soft.
- 2. Add in 2 c. water and the potatoes.
- 3. Simmer, covered, till potatoes start to soften.
- 4. Wash kale and chop; steam kale separately.
- 5. When potatoes are well done, puree half of them with remaining water.
- 6. Combine all ingredients.
- 7. Add in salt and pepper.
- 8. If needed, add in more water or possibly lowfat milk for desired consistency.
