Receta Potato Leek Soup
Delicious, thick soup--perfect comfort food!
Ingredientes
- 2 Tablespoons butter or margarine
- 1 large chopped onion
- 2-3 chopped leeks
- 2 Tablespoons flour
- 4 cups water, vegetable or chicken stock
- 3 medium peeled, chopped potatoes (or could use 6-8 small white unpeeled, chopped potatoes)
- salt and pepper to taste
- 1 cup milk (can use low fat, fat free or even lactose-free)
Direcciones
- Over medium heat, melt butter in soup pot.
- Add onions and leeks.
- Saute gently until soft.
- Stir in flour and cook for 2 minutes.
- Gradually stir in stock.
- Add potatoes.
- Bring to boil.
- Simmer gently 30-40 minutes.
- Stir in milk.
- Puree soup in blender.
- Add salt and pepper to taste.
