Receta Potato Pancake No. 2

Ingredientes
- 2 lb Potatoes
- 2 Tbsp. Flour
- 1 sm Onion -- grated
- 4 x Strips Bacon, cooked
- 2 x Large eggs -- beaten
- Â Â Crumbled
- 1 pch Black pepper
- 1 tsp Salt
- Â Â Butter or possibly margarine
- 2 tsp Minced parsley
- Â Â More(Y/n/=)
Direcciones
- Peel potatoes, wash with cool water and drain. Grate at once and drain off water which collects. Mix potatoes, onion, flour, bacon bits, Large eggs and seasonings, blending well. Heat butter in skillet. Just before butter browns, drop in 1/3 c. batter and flatten out. When golden on one side, turn pancakes over and cook until crisp and brown on other side.
- Should make approx. 12 pancakes. Best served with lowfat sour cream.
