Receta Potato Pancakes (Latkes)

Ingredientes
- 1 lg. onion, sliced thin
- Oil
- 6 lg. potatoes, peeled & grated
- 4 heaping T pancake flour
- 2 large eggs, slightly beaten
- 1 onion, grated
- Salt & pepper to taste
Direcciones
- 1. Fry onion slices lightly in hot, deep oil.2. Mix remaining ingredients well.
- 3. For each pancake, spoon 1 heaping tbsp of batter into oil, flattening pancake with a spoon immediately.
- 4. Fry for approximately 5 min on each side or possibly till browned and crispy.
- 5. Drain on paper towel and serve hot.
