Receta Potato Parsnip Salad With Aquavit Dressing

Ingredientes
- 3/4 c. mayonnaise
- 7 Tbsp. aquavit
- 3 Tbsp. white wine vinegar
- 1/2 med red onion thinly sliced
- 1Â 1/2 tsp caraway seeds
- 1Â 1/2 lb baby red potatoes (about 18), halved
- 1 lb medium parsnips peeled, cut into 1/4-inch-thick slices
Direcciones
- Whisk mayonnaise, 3 Tbsp. aquavit and vinegar to blend in medium bowl. Season to taste with salt and pepper. Transfer 1/4 c. dressing to
- small bowl and reserve. Add in onion and caraway to dressing in medium bowl.
- Mix well and let stand 30 min.
- Steam potatoes over boiling water till tender, about 15 min.
- Transfer to large bowl. Gently fold in 2 Tbsp. aquavit. Steam parsnips till just tender, 4 to 5 min. Place atop potatoes in bowl.
- Sprinkle with remaining 2 Tbsp. aquavit. let cold 15 min. Pour
- onion-dressing mix over and stir gently. Moisten with reserved dressing if you like. Season generously with salt and pepper. Serve slightly hot or possibly at room temperature.
- Serves 4 to 6.
