Receta Pumpkin Oatmeal Cookies
Chewy, nutty, spicy and soft - cookies to serve holiday company or take to share at work or meetings. Change ingredients out to your liking - use raisins or Craisins; walnuts or pecans; all-purpose or white whole wheat flour; and brown sugar blend or other combination of baking sweetener in place of, or part of the sugar. Have it YOUR way!
Ingredientes
- 2 cups flour
- 1 cup oatmeal
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/4 teaspoon cloves
- 1 cup butter (2 sticks), softened
- 1 cup brown sugar
- 1 cup white sugar
- 1 egg
- 1 cup pumpkin
- 1 teaspoon vanilla extract
- 1 cup raisins or dried cranberries
- 3/4 cup chopped walnuts
Direcciones
- Preheat oven to 350 degrees F.
- Combine flour, oatmeal, baking soda, salt, cinnamon, allspice and cloves.
- In large mixing bowl beat together butter with brown and white sugars. Add egg, pumpkin and vanilla, mixing well. Stir in raisins and nuts.
- Drop by rounded tablespoons onto lightly greased baking sheets. Bake 15 to 20 minutes, or until cookies are golden brown and middle is set. Remove from oven; cool slightly then remove from pan to wire rack to cool completely. Store flat without stacking to preserve shape best.
- Yield: 4 dozen large cookies
