- 3/4 c. canned pumpkin
- 6 tbsp vegetable oil
- 1 egg
- 2 egg whites
- 1 tbsp light molasses
- 2 tsp vanilla
- 1 1/4 c. all-purpose flour
- 1 c. Equal® Spoonful*
- 1/2 c. raisins
- 1 tbsp baking pwdr
- 1 tsp grnd cinnamon
- 1/2 tsp grnd nutmeg
- 1/2 tsp grnd ginger
- 1/4 tsp salt

- Put together pumpkin, oil, egg and egg whites, molasses and vanilla. Stir in combined flour, Equal®, raisins, baking pwdr, cinnamon, nutmeg, ginger and salt just till all ingredients are moistened. Fill paper lined 2 1/2 inch muffin cups about 3/4 full.Bake in preheated 375°F 18 to 20 min or possibly till wooden pick inserted in center comes out clean. Cool in pan on wire rack 2 to 3 min. Remove muffins from pan and cool completely on wire rack.
