- 1 lb Rainbow trout fillets
- 1/4 c. Flour
- 1/4 c. Cornmeal
- 1/2 tsp Salt
- 1/4 tsp Cayenne
- 2 Tbsp. Oil
- 4 x Lemon wedges

- Coat fish with a mix flour and cornmeal, salt and pepper. Heat 2 tbsp oil in skillet over medium heat; cook fish 5-6 min. Turn and cook 5-6 min till fish flakes. Serve with lemon wedges.
