Receta Reggie's Special Mashed Potatoes

Ingredientes
- 4 x Potatoes
- 1 x Shallot Diced
- 1 x Clove Garlic Chopped
- 1/4 tsp Dry Rosemary Minced
- 1 Tbsp. I Cannot Believe It's Not Butter - Light Or possibly
- Â Â Light Margarine
- 2 tsp Extra virgin olive oil
- 1/4 c. Nonfat Lowfat milk
- Â Â Salt And Pepper To Taste

- Cut and rinse the potatoes (I left the skin on them). Boil them in sufficient salted water until they are fork tender.
- Saute/fry the shallot in the extra virgin olive oil for 1 - 2 min add the chopped garlic and saute/fry for another couple of min till lightly browned. Add the rosemary (I ran the rosemary thru an electric coffee mill to mince it finely). Saute/fry another 30 seconds.
- Drain potatoes and return to same pot to keep hot while you mash them.
- Add sufficient margarine and lowfat milk to make the potatoes to your favorite consistency (I like them with some lumps). Add in the shallot mix, mix well.
- This tasted very good!! Quick and easy and a change from plain ol' mashed potatoes.
- NOTES : Here is a different way to enjoy mashed potatoes.
