Ingredientes

  • 3 lb moose roast - (to 4)
  • 1/2 c. vinegar
  • 1/2 c. red cooking wine divided
  • 1 tsp meat tenderizer
  • 2 tsp salt
  • 2 tsp freshly-grnd black pepper
  • 1 tsp garlic pwdr
  • 6 x thin slices fresh lemon
  • 4 slc salt pork - (to 6)
  • 1/4 c. butter
  • 1/4 c. honey
  • 1/2 c. frzn orange juice concentrate
  • 1/2 tsp rosemary

Direcciones

  1. Soak roast in water with 1/2 c. vinegar overnight. Rinse and dry well.
  2. Brush with wine. Shake on tenderizer, salt, pepper, and garlic pwdr. Place lemon slices on top of roast. Place salt prok on top of lemon slices. Secure with toothpicks. Place in 300 degree oven 4 to 5 hrs.
  3. In top of double boiler, heat butter; add in honey, orange jucie, remainder of wine and rosemary. Baste roast often with this mix while baking.
  4. Did you know which... After cooking, small roasts should sit for 10 to 15 min before carving; a large roast should sit for 20 to 30 min.
