Receta Roasted Beet And Pickled Herring Salad With Dressing

Ingredientes
- 1 lb beets
- 1 Tbsp. dry mustard
- 1Â 1/2 c. buttermilk
- 2 Tbsp. coarse-grain mustard
- 1/4 c. minced dill
- 1 sm red onion halved, sliced thin
- 3 x filets of pickled herring cut into 1" pcs
- Â Â Bibb lettuce for serving
Direcciones
- Wrap the beets in foil and place on a rack, set over a pan of warm water. Roast in a preheated 400 degree oven for 40 min. When cold sufficient to handle, peel, and slice into 1/4-inch disks.
- Whisk the dry mustard into the buttermilk, then fold in the grain mustard, dill, onion and herring. Chill the herring for 1 hour. Fan beets out on Bibb lettuce. Place herring mix on top.
- This recipe yields 4 to 6 servings.
