- 2 tsp extra virgin olive oil
- Â Â Salt and freshly grnd pepper
- 3/4 lb sweet potatoes, peeled and cut into 1- to 2 inch pcs
- 1/4 lb broccoli florets

- Preheat oven to 400 degrees. Line a baking sheet with foil and add in extra virgin olive oil and salt and pepper to taste. Place potatoes and broccoli on sheet in one layer and toss in the seasoned oil. Roast 10 min; turn vegetables and roast 10 more min.
