- Heat butter in a 2-qt saucepan till frothing. Remove from heat and stir in flour with a whisk. Cook over low heat for 4 to 5 min, stirring constantly. Add in 1/2 of the warm lowfat milk and whisk till smooth. Add in remaining lowfat milk and whisk till smooth. Bring to boil, add in nutmeg, lower heat and simmer 10 min.
- Can be used warm or possibly cool.
