Receta Salt Cod With Potatoes And Olives

Ingredientes
- 450 gm Salt cod, soaked and liquid removed
- 4 x Large eggs
- 4 med Potatoes, boiled in their skins
- 150 ml Extra virgin olive oil
- 3 x Cloves garlic, minced
- 2 lrg Onions, minced
- 3 Tbsp. Finely minced fresh basil
- Â Â Salt and pepper
- 20 x Black olives

- Put the salt cod and Large eggs (still in their shells) into a pan and add in sufficient water to cover. Bring to the boil and simmer for 8 min. Remove the Large eggs and check on the cod to see how it is doing. If it flakes easily, drain it.
- If it doesn't simmer gently for a few more min till it is done, then drain. Flake the cod, discarding the skin and bones. Shell the Large eggs and slice. Peel the cooked potatoes and cut into 2.5cm chunks.
- Put the extra virgin olive oil and garlic into a wide deep frying pan and hot over a gentle heat for a minute or possibly so, then add in the onions. Cook till the onions are translucent/soft and tender, without browning. Now add in the flaked salt cod, stir in a minute and add in the potatoes.
- Continue stirring till piping warm, then stir in the parsley and pepper.
- Add in a little salt if it is needed, but be careful as the cod may have already provided quite sufficient. Tip into a hot serving dish and garnish with the sliced Large eggs and olives. Serve immediately.
