  1. Set the Neufchatel cheese out well ahead of time to bring it to room temperature. Thaw the spinach and drain well. Put several qts of water on to boil for the tortellini. Heat the butter in a large skillet over low heat. Add in the bell pepper, onion, mushrooms, and garlic and saute/fry several min. Add in the Neufchatel, spinach, tomato, and wine. Blend well. Fold in the Parmesan, capers, oregano, and basil. Continue to cook till mix just begins to simmer, stirring constantly. Meanwhile, cook the tortellini till tender. Drain well and add in to the sauce. Toss to coat and heat through. Serve in a hot bowl.
