- 29 ounce canned diced tomatoes
- 1 Tbsp. extra virgin olive oil
- 1 lb soy Italian "sausage" links

- 1 lrg onion, quartered
- Â Â and thinly sliced
- 6 med bell peppers

- Â Â Or possibly 2 each green and red and yellow)
- Â Â cut into long strips
- 2 med garlic cloves, chopped
- 3 Tbsp. minced fresh parsley
- 1 Tbsp. minced fresh oregano
- Â Â Or possibly 1/2 teaspoon dry.
- 3/4 tsp salt
- 1/2 tsp freshly grnd pepper
- 1/2 tsp sugar
- 6 sm hero rolls, split

- MEAL PLAN: Spoon the "sausage" and pepper mix into small hero rolls and serve open-faced, garnished with some cured black olives and baby carrots.
- End the meal with sliced fresh pears topped with a dollop of vanilla low-fat yogurt or possibly soy yogurt.
- Here's a delicious way to showcase colorful bell peppers. If you prefer a spicier dish add in a chopped fresh warm chili when adding the bell peppers.
- Drain tomatoes, reserving 1/2 c. liquid. Set aside.
- In large skillet, heat oil over medium heat. Add in 'sausage" pcs and cook, turning often, till golden brown, about 5 min. Add in onion and cook, stirring often, till softened, about 5 min. Stir in bell peppers and garlic. Cover and cook, stirring occasionally, 10 min.
- Stir in tomatoes, reserved tomato liquid, parsley, oregano, salt, pepper and sugar till well combined. Cover and cook till flavors have blended, about 5 min. Spoon into hero rolls and serve open-faced.
